4.1Rice viscosity testing box1 host

The viscosity of rice gum reflects the colloidal fluidity of rice starch during heating, gelatinization, and cooling, which directly affects the taste and edible quality. The measuring box simulates the cooking process and combines precision measurement technology to achieve standardized operation throughout the entire process

  1. Sample processing: The milled rice flour is heated and gelatinized after alkali treatment (such as adding 0.2mol/L KOH solution) to fully disperse the starch.

  2. Cooling moldingAfter gelatinization, the rice gel is cooled in an ice water bath for 20 minutes to form a stable colloid.

  3. Flow measurementPlace the test tube horizontally and let the rice glue flow under gravity for 1 hour. Measure its flow length (in millimeters) and calculate the viscosity value based on standard parameters.
