In the initial stage, if the material temperature is relatively high, the latent heat required for sublimation can be taken from the sensible heat of the material itself. But with continuous sublimation, the material temperature quickly drops to a temperature that is in equilibrium with the vapor pressure in the drying chamber. At this point, if there is no external heating, sublimation drying will stop. In the case of external heating, if the steam generated by sublimation is not eliminated in a timely manner, the partial pressure of steam will increase, and the temperature of the material will also increase. When the freezing point of the material is reached, the ice crystals in the material will melt, and freeze-drying cannot be carried out.

The process of supplying is a heat transfer process, while the process of removing steam is a mass transfer process. Therefore, the sublimation drying process is a process of simultaneous heat and mass transfer. Any process that occurs in nature has a driving force. The heat transfer driving force in sublimation drying is the temperature difference between the heat source and the sublimation interface, while the mass transfer driving force is the steam partial pressure difference between the sublimation interface and the steam trap (or cold droplet). The larger the temperature difference, the faster the heat transfer rate; The larger the steam partial pressure difference, the faster the mass transfer (i.e. steam removal) rate.

The latent heat required for sublimation must be transferred from the heat source to the surface of the dried material through an external heat transfer process, and then transferred to the actual location of ice sublimation inside the material through an internal heat transfer process. The generated water vapor must reach the surface of the material through an internal mass transfer process, and then be transferred to the steam trap (cold) through an external mass transfer process. Any one or several processes together can become the "target" of the drying process, which inevitably involves the design of freeze-drying equipment, operating conditions, and characteristics of the dried material. Only by simultaneously improving heat and mass transfer efficiency and increasing the volume of freeze-dried materials per unit volume can it achieve a rapid drying rate.
