Based on these regulations and standards, some methods have been applied in practice in recent years, such as using oil fume purification systems and monitoring them. In order to achieve real-time monitoring of oil fume emissions, it is often necessary to install data acquisition and communication devices. Due to technological limitations, previous online monitoring systems for oil fume could only simply monitor the on/off status of various devices in the oil fume purification system, such as fans and purifiers. As long as all devices were turned on normally, it was simply assumed that the oil fume emissions met the standard. Alternatively, monitoring the operating power and status of the oil fume purification equipment can be used to determine its working status and cleanliness level based on changes in these parameters, in order to estimate whether the equipment needs to be cleaned and whether the oil fume emissions meet the standards.

In fact, since there is no direct correlation between the operation of equipment and the concentration of oil fume, technically speaking, these methods actually use equipment monitoring methods, which can only monitor the operating status of related equipment and cannot know the actual situation of oil fume emissions. So, to be precise, such a system should only be an online monitoring system for oil fume purification equipment, not an online monitoring system for oil fume, and such a system cannot reflect the actual emissions of oil fume.

In order to truly and effectively monitor the oil fume emissions in the catering industry, new methods need to be adopted to conduct real-time sampling and analysis of oil fume, in order to obtain accurate quantitative data on oil fume concentration, and truly incorporate the oil fume emissions in the catering industry into the pollution source online monitoring system. The integrated management platform for grid based supervision and management of catering oil fume mainly includes two parts: basic hardware and application system software. The basic hardware mainly includes servers, online monitoring (control) devices, etc., while the application system software mainly includes operating software and databases. The equipment maintenance management function is mainly used to supervise whether the equipment maintenance personnel regularly maintain the purification facilities (fans, purifiers) and online monitoring (control) instruments. After the equipment maintenance personnel arrive at the site for maintenance, they upload the maintenance records on the mobile APP, save them, and the information is automatically uploaded to the Environmental Protection Bureau Information Center Management Platform; Management personnel can effectively supervise equipment maintenance personnel through this function.
